Originally from Ibaraki Prefecture, Yamanaka came to Hokkaido to pursue snowboard instructor certification, drawn by the island's exceptional powder snow. He worked as an instructor during winter seasons and restaurant server during summers, gradually developing a deep interest in wine that led him to earn his sommelier certification.
After being profoundly moved by Domaine Takahiko's extraordinary wine quality and philosophical approach to winemaking, he trained intensively for two years under their guidance before establishing Domaine Mont in September 2016. The thoughtful winery name 'Mont' carries three meaningful layers: 'Mont' referencing his surname Yamanaka (mountain), 'Mon' (representing the family crest that appears on his wine labels), and 'Mon' (gate), symbolizing his respectful departure through Domaine Takahiko's gate to pursue his independent vision.
Following the teachings of his mentor Soga-san, he practices vineyard management that embraces natural principles, completely avoiding herbicides, chemical fertilizers, and synthetic pesticides. His fermentation relies entirely on wild yeasts, reflecting his commitment to the gentlest, least stressful winemaking methods possible. Having completed the planting of approximately 5,000 vines, he proudly released his first estate Pinot Gris wine in 2019.
