A rising winemaker who has captured national attention throughout Japan. Originally from Nagano Prefecture, Takahiko served as head winemaker at Coco Farm Winery before recognizing Yoichi's exceptional potential for grape growing and making it his home.
The vineyard is organically managed, devoted entirely to Pinot Noir cultivation. He practices whole cluster fermentation with wild yeasts, using minimal sulfites only when absolutely necessary for protection. His approach avoids racking and filtering, embracing gentle, low-intervention winemaking methods.
'My ideal is creating wines with umami and delicacy that speak to Japanese palates, honoring our dashi culture,' he explains. He follows a philosophy of providing only essential care while dedicating time and patience to thoughtful cultivation.
